HEY! Welcome to Kilroy’s Kitchen. It is SO NICE(!!) to meet you. Or not meet you. Well, kinda. Whatever. For those of you out of the loop, my name is Erin and I do all of the cooking, photographing (should I admit that?), recipe development, and blogger over here at Kilroy’s Kitchen!
I’m a Chicagoan, born & raised (the suburbs DO COUNT!) but I enjoy getting out of this part of the world whenever possible. I live with my boyfriend, Matt, who loves to help me in the kitchen and will often send me pictures of delicious-looking food for me to try out.
Well let’s see here… where do I even start? It all started in 2010 and I think I’ll spare you most of the boring details but basically… I needed to eat healthier. Apparently, a diet based on carbohydrates and drunchies (the drunk munchies) is not a good diet. Who knew, right? So my New Years Resolution for 2010 was to get my sh-t together: workout more & eat healthier.
I started by severely restricting my diet and ate basically the same things every single day. Not only that, but I was running 6 times a week so naturally, I lost a lot of weight quickly. After a running injury, I gained some healthy weight back (yay!) and started educating myself on what a healthy diet really consists of. At the end of 2012, I made the decision to transfer schools and begin studying Dietetics, a program I eventually earned my BS in.
So I obviously love food, right? I mean, I surrounded my entire life around it. And that’s how we got here. Some of my friends were sick of seeing my food posts on Instagram (terrible friends, I don’t need that kind of negativity in my life!) so I began blogging and here we are today!
Nowadays, I try my hardest to eat a mostly clean diet: tons of vegetables, lean proteins, fruits, and nuts. It’s not always easy, as most people are probably aware, but I try!
I’m not a kitchen expert and I don’t claim to be. I just try to make (usually) healthy meals, some decadent desserts (good word choice, Erin), fun snacks, and good drinks. I’m also ballin (cooking?) on a budget over here so if you’re into that – YOU’VE COME TO THE RIGHT PLACE.
I’ll be sharing bits of my personal life as well because you all totally care, right? Right. Nutrition is one of my passions and because of that, I’ll occasionally share some informative posts. If you have any requests, let me know! Along with food and nutrition, overall wellness is one of my favorite things so expect to see a bit of that thrown around, too. BESIDES ALL OF THAT GOODNESS, you’ll be seeing my family, friends, and ~travels, though I will never pretend to be a lifestyle blogger. I’m outgoing but not outgoing enough for that.
